The flat grind's primary bevel slopes linearly and slowly. This is why the majority of kitchen knives are flat ground - so they can pass through food easily without much resistance. The full ...

The Flat Grind. When using a belt grinder, the flat surface is relatively easy to establish. That is not so easy using a grinding wheel because it takes lots of different "tracks" to make the wedge, and then the tracks have to be blended into the surface of the steel with a disc sander, or by draw filing.
Jantz Supply offers everything you need to make the finest knives in the industry with steel and metals, handle materials, polish paper, adhesives, and more.
I grind with a Bubble Jig but my beginning angle is 5 degrees and not 45. @ 45 degrees the edge happens in a hurry. I am using 2 pieces of angle iron butted together as a jig to hold the blade, but can't get center to the blade edge on either side centered.
Bevel jig made from 2" angle iron. Drilled like a tooling plate. Provides accurate and consistent results (as much as can be expected in manual grinding).
